Race Winners



I know this has nothing to do with country (only in our part of the country) and primitive anything but My husbands car placed 1st at the I-40 drag strip in Crossville TN last night. I'm proud of them they've had several 2nd place wins but no 1st until last night. This is how they spend a Saturday night and it allows me the time to create my soaps, crafts, ... Thank God for East TN drag racing!

Morning all!

Sitting here on the front porch with a cup of coffee and laptop enjoying the cool morning air. Check out our scarecrow we've named Gordy. My sister came up a couple of weekends ago and helped create Gordy. He greets the neighbors and wishes them Fall blessings. Well it's time to get to the shop and create some fabulous birdhouses and prepare for next weekends craft show in Tellico Plains, TN. I feel a fall breeze in the air and it always makes me crave sweet potato pie ( here that's sweet tater pie ) I thought I would share my recipe with you. ENJOY!

Sweet Potato Pie

INGREDIENTS
1 unbaked 9-inch deep-dish pie shell
2-3 eggs - slightly beaten
3/4 cup granulated sugar
2 1/4 cups
NestleĀ® Carnation Evaporated Milk
1/2 cup (1 stick) butter - melted
1 1/2 teaspoons ground cinnamon
3/4 teaspoon salt (optional)
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
2 3/4 cups cooked sweet potatoes

Preheat oven to 425 degrees F

Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in
sweet potatoes and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.

Bake for 15 minutes. Reduce temperature to 350 degrees F; bake for 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.
Serve immediately or refrigerate.
8 servings per pie.
